This Specific Carbohydrate Diet (SCD) chicken ball appetizer is a sure crowd pleaser. Eat 'em before they're gone.

Ingredients

  • 2 lbs ground/minced chicken
  • 1 cup almond flour
  • 1 tsp garlic powder
  • 1 Tbsp ground coriander
  • 1 tsp red pepper flakes
  • 4 spring onions, minced
  • 1 cup fresh cilantro, minced
  • 1/4 cup honey
  • 1 tsp hot chili oil
  • 1 jalapeno, diced
  • 1 lime, juiced
  • 4 Tbsp (olive) oil for frying

Directions

Yield: 4 servings
Prep time: 20 minutes
Cook time: 25 minutes
Total time: 45 minutes
  • Preheat oven to 400 degrees F.
  • Combine all ingredients (except frying oil) in a bowl. Mix well.
  • Form 1-2 inch balls from mixture. Fry all balls until brown (about 1-2 minutes per side, flipping only once). This may need to be done in batches. Place fried balls on baking sheet.
  • Bake all balls at once for 10-15 minutes.
  • Serve and enjoy!
