This Specific Carbohydrate Diet (SCD) recipe for a chicken main course is quick, easy, and from ingredients probably already in your kitchen.

Ingredients

  • 2 Tbsp olive oil
  • 6 chicken thighs (with skin and bones)
  • Salt and pepper
  • 4 cloves garlic, chopped
  • 1 cup tomatoes, diced
  • 1/2 cup pitted black olives, rinsed, halved
  • 2 tsp dried oregano
  • Parmesan cheese (to taste)

Yield: 3-6 servings
Prep time: 12 minutes
Cook time: 48 minutes
Total time: 60 minutes
  • Preheat oven to 375 degrees F.
  • Salt and pepper the chicken (on both sides) before placing the chicken in a large, heated pan. Fry all the chicken skin side down initially, in olive oil, for 4 minutes. Afterward, flip each chicken piece over for another 4 minutes. Transfer only the chicken (skin side up) to a 9x12 baking dish.
  • In a medium bowl, combine the garlic, tomatoes, olives, and oregano. Pour remaining oil and chicken browned bits from the pan into the bowl. Mix well.
  • Transfer bowl mixture onto the chicken pieces in the baking dish evenly.
  • Place baking dish into the oven for approximately 40 minutes (or until the chicken is no longer pink on the inside).
  • Sprinkle freshly grated Parmesan cheese over chicken.
  • Serve and enjoy!
