SCD Chicken, Basil, Coconut Milk Curry

This basic Specific Carbohydrate Diet (SCD) chicken curry takes a while to make, but is so worth it when the chicken meat falls right off the bone. It's quite delicious!

Ingredients

  • 3 lbs of dark chicken meat (thighs and/or drumsticks)
  • Salt and pepper
  • 20 medium basil leaves, whole
  • 1 bay leaf for every piece of chicken (minimum)
  • 1 head of garlic, each clove peeled and smashed
  • 1 small onion, diced
  • 1 Tbsp curry powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1/4 cup apple juice
  • About 24 oz. SCD-legal coconut milk

Directions

Yield: 4 servings
Prep time: 15 minutes
Cook time: 2.5 hours
Total time: 3 hours
  • Preheat oven to 450 degrees F.
  • Lightly salt and pepper all chicken pieces and then place in a 9x12 baking dish. Bake until brown (approximately 35 minutes).
  • Meanwhile, combine paprika, apple juice, salt, pepper, and curry powder in a bowl with the coconut milk. Stir well.
  • After chicken is browned, place one bay leaf under each piece of chicken. Work the basil around and under the chicken. Pour the garlic and onion over the chicken pieces. Pour coconut milk mixture over everything.
  • Turn temperature down to 375 degrees F and bake covered for an additional 2 hours.
  • Remove bay leaves, serve, and enjoy!
