This Specific Carbohydrate Diet (SCD) recipe for chicken cabbage-wrapped dumplings has 3 main steps that can be done simultaneously to help cut back on cook time. The dipping sauce is on the sour side, and still a work in progress.

Ingredients

  • 1 whole cabbage
  • 2 chicken breasts (de-boned, skinless), minced
  • 5 green onions, minced
  • 3 tsp freshly grated ginger
  • 3-4 cloves garlic, minced
  • 5 Tbsp sesame oil, divided
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 cup vinegar
  • Chili oil to taste
  • Sesame oil to taste

Yield: Approximately 15-30 servings
Prep time: 20 minutes
Cook time: 52 minutes
Total time: 72 minutes
  • Remove 2-3 inches of the center core of the cabbage without affecting the surrounding leaves, so that a small hole or pyramid-shaped cavity exists in the center of the cabbage. Steam entire head of cabbage for 10 minutes. Cool slightly. Then, remove as many cabbage leaves as are easily peelable. Once the leaves start to feel raw again or are simply too difficult to remove, steam the remainder of cabbage for another 10 minutes. Repeat as many times as necessary until you have enough cabbage leaves or there are no more leaves remaining.
  • In a medium bowl, mix together the raw chicken breast, green onions, garlic, ginger, 3 tablespoons of sesame oil, salt, and pepper.
  • Remove center rib from each cabbage leaf and cut the leaves in half. Wrap 1 tablespoon of filling in each leaf. Adjust filling amount as the leaves get smaller. Wrap in more than one leaf if necessary.
  • Steam the filled leaves/dumplings for 10 minutes. This may be done in several 10-minute batches.
  • Heat a large pan with 2 tablespoons of oil and fry the dumplings in batches for 2 minutes per side (flipping only once).
  • To make the dipping sauce, combine the vinegar, chili oil, and sesame oil to taste.
  • Serve and enjoy!
