SCD Salmon with Pine Nuts, Spinach, and Mushrooms

This Specific Carbohydrate Diet (SCD) salmon dish combines a lot of different flavors that work together for a relatively fast dinner.


  • 12 oz. salmon, with skin, no bones, divided into 2 fillets
  • Salt and pepper
  • 4 Tbsp of olive oil
  • 12 oz. baby spinach
  • 16 oz. white button mushroom, sliced
  • 1/2 cup white wine
  • 4 garlic cloves, minced
  • 1 medium lemon, juiced
  • 1/2 cup of pine nuts
  • Freshly grated Parmesan cheese (to taste)


Yield: 2 servings
Prep time: 15 minutes
Cook time: 20 minutes
Total time: 35 minutes
  • Salt and pepper the salmon. Fry in olive oil for 4 minutes skin side down. Flip over once for an additional 4 minutes. Transfer to plate.
  • Sauté mushrooms for 3 minutes, scraping the pan throughout. Add garlic, and sauté for another 1-2 minutes. Add wine and deglaze the pan for 3 minutes. Add lemon and spinach. Cook until spinach is wilted. Add pine nuts and cook for an additional 2 minutes. Turn off heat.
  • Serve each salmon fillet on a plate, add mushroom, pine nut, spinach topping with sauce. Top off with Parmesan. Enjoy!
