Although normally eaten with pita/bread, this Specific Carbohydrate Diet (SCD) Shakshuka stands on its own.

Ingredients

  • 5-8 eggs (as many as will fit in the pot once deposited)
  • 2 lbs tomatoes (any variety), diced
  • 2 Tbs olive oil (add more if necessary throughout cooking)
  • 1 red bell pepper, diced
  • 1 large yellow onion, diced
  • 1/8 tsp garlic powder
  • 1.5 tsp cumin
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp cayenne pepper
  • 1/4 cup cilantro, minced stems, leaves whole
  • Tabasco to taste
  • Freshly grated Parmesan cheese (to taste)

Directions

Yield: 4 servings
Prep time: 20 minutes
Cook time: 40 minutes
Total time: 1 hour
  • Using a pot, sauté red bell peppers for one minute. Add onion and sauté both for an additional 10 minutes. Add tomatoes and let simmer for 15-20 mins, or until the tomato mixture is almost soup-like. Stir frequently.
  • Add all spices including cilantro stems, but not cilantro leaves (save for garnish). Mix well.
  • Making 1-inch wells/holes or pockets big enough to hold an entire egg in the tomato mixture, crack and drop a whole raw egg (no shell). Repeat until all eggs are placed without overlapping one another. Feel free to baste eggs with surrounding tomato mix. Let eggs cook for 3 minutes with the pot lid on.
  • Add a layer of Parmesan over the the tomatoes and eggs. Then add cilantro leaves to make a layer above the Parmesan. Then add another layer of Parmesan cheese. Let cook for an additional 1 minute.
  • Serve in bowls or pasta plates, and enjoy!
